果菜健康美容的起源、发展、现况与实惠

※ 起源、发展现况
果菜健康美容的运用,据说起源于秦始皇时代。当时三宫六院中的后妃为了美容与健康的因素,多以果菜来达到减肥与美颜的效果,以赢取秦始皇的欢心。由于实际功效高,加果菜易于取得,所以利用果菜来达到健康美容的方法,也很快的流传到民间,普受大从所采用。
到了唐朝时代,果菜健康美容的方法开始外传到西域,并受到西域人士的欢迎。第二次大战期间,由于动物大量死亡,肉类广缺,于是人们以果菜取代肉类,不知不觉中,果菜健康美容的功效更普遍受到重视。
今天、由于工商业的发达,者市生活紧张与忙碌,人们饮食不定时且不注意营养成份。大量摄取动物性脂肪、蛋白质;如鸡、鸭、鱼、肉、海鲜、蛋等。而减少植物性的食物:如豆类、蔬菜、水果等。不均衡的饮食习惯,久而久之造成皮肤渐枯、衰老;体质弱,抵抗力不够,血液酸性过高,血液循环不顺畅,体温增高,形成种种皮肤疾病,如青春痘、暗疮、脓疱、黑头、白头、黑斑、凹洞、眼疣、肉粒、毛孔粗大、狐臭、白斑等。身体健康方面,由于大最摄取动物性脂肪、蛋白质、造成胆固醇过多,形成各种疾病如:心脏病、肥胖、便秘、动脉硬化、肝硬化、高血压、癌症、肾结石、肠胃消化不良、胃溃疡、糖尿病等等。

水果与蔬菜的效用如下:

水果和蔬菜的营养意义
一般蔬菜、水果皆含水份、纤维质、无机盐类及维生素,是膳食中维生素A、维生素C、钙和核黄素的主要来源。尤以绿叶类蔬菜在供给居民膳食中主要维生素及无机盐方面意义更大。如果选择得当,每人每日膳食中有半斤左右的绿色菜或橙黄色菜,即可满足机体的维生素和无机盐的最低需要量。

一、蔬菜
按其营养卫生意义,可分为叶绿类、根茎类、花芽类、瓜果类、豆荚类、菌类。
1、 绿叶类:菠菜、白菜、油菜、雪里菜、荠菜、韭菜、蕹菜等。
2、 根茎类:根部如葱、蒜罗卜、山药(又名山薯)、马铃薯、白薯等;茎部如芹菜、龙须菜(又名芦笋)、韭菜、莴苣等。
3、 花牙类:如菜花、黄花菜、各种豆芽等。
4、 瓜果类:如西红柿、柿椒、黄瓜、茄子等。
5、 豆荚类:如扁豆、四季豆、毛豆、碗豆等。
6、 菌类:是不含叶绿素的植物,如鲜磨菇(新鲜菌子)。
蔬菜的营养价值:
1、 热量:大部分蔬菜所含的水份很高,因此所能供给的热力不多,只有含淀粉较多的根茎类始能供给较多的热量。大部份蔬菜平均每100克约供给热量10—40卡。
2、 蛋白质:蔬菜所供给的蛋白质也极少,只有豆荚类的含量较高。 一般蔬菜平均每100克中约含蛋白质1克。
3、 无机盐:绿叶蔬菜为无机盐的重要来源,含有钙、磷、铁和铜等元素。其钙质之使用效率视蔬菜中所含的草酸而定,虽然如此,但蔬菜仍不失为膳食中钙的丰富来源。
4、 维生素:
(1) 胡萝卜素:绿色及黄色的蔬菜都含有胡萝卜素,以薄的绿叶含的最多。根茎类除胡萝卜、红薯外,一般含量均较少。有些野菜,如苜蓿(草头)、长寿菜(马齿苋)及莴苣菜叶、芹菜叶等也都含有丰富的胡萝卜素。
(2) B族维生素:一般来说,蔬菜并非B族维生素之主要来源。蔬菜中的豆荚类、蒜头、白薯、黄花、龙须菜、甘蓝菜、菠菜等,所含的维生素B,及烟碱素比较丰富。
(3) 维生素C:一切新鲜蔬菜均含有维生素C、尤以大白菜、小白菜、油菜、苋菜、柿椒、西红柿、苦瓜等含量较多。
叶菜类所含的无机盐及维生素较其他根茎类、瓜果类等要多,所以应多吃叶菜类蔬菜。
烹调与营养价值的关系:蔬菜经烹调后,损失一部分维生素,其量视菜蔬之烹调法而定。损失最多的是维生素C,其次是维生素B,损失最少是胡萝卜素。为了减少蔬菜中无机盐及维生素的损失,应注意以下几点:
1、 菜之外皮或豆类之荚等,须在使用之前才将它去掉。
2、 蔬菜应整洗而后切开,洗时不要长时间泡在水里,同时不要切得太碎,以减少维生素的损失。
3、 不要使用铜制器皿,并勿加碱。
4、 烹调时间要短,制汤时,宜先将汤煮开,而后加菜。
5、 由于有些维生素能溶在水里,所以烹调时要少加水。食用菜汤,尤须改正挤出菜汁的不良烹调方法。
6、 蔬菜烹调完毕,应即食用,减少中间放置的时间。

二、水果
水果的营养成分、营养价值怀新德蔬菜相类似。
1、 热量:来自所含的醣类,如:果糖、蔗糖、淀粉等,但含量并不太多,所产生的热量有限。
2、 蛋白质:鲜果的蛋白质含量也低,平均每100克中所含不及1克。
3、 无机盐:鲜果类为钙、磷、铁、铜、锰等无机盐的良好的来源;而干果所含的又较鲜果所含的为多。其中红果、橘柑和草莓等含钙稍多,葡萄、枣、红果、香蕉、杏、草莓、樱桃等铁稍多。
4、 维生素:
(1) 胡萝卜素:红黄色水果如柑橘、红果、樱桃、菠萝等均富于此素。
(2) B族维生素:仅干果类含B族维生素较多。
(3) 维生素C:鲜果为维生素C的丰富来源。而一般果皮又较果肉中含的为多。
水果除供给无机盐和维生素外,还供给有机酸和纤维素,前者能刺激胃液,后者能促进肠道蠕动,因此有助于消化和排泄。

果菜汁中含人体内所需各种养份,它能带给每个人健康及活力,是一种适合男女老少的营养饮料。无病者饮之健身,有病者饮之有助康复,特别是患有下列病症者,应多饮果菜汁来减轻病情:
Fruit and vegetable juice contains the various nutrients required by the body and it can bring upon every person health and vigor. It is a nutritive beverage suitable for young and old people. Those people who are healthy drink it to stay healthy, and those who are ill drink it to recover from illness. (1)高血压病患者
People suffering from hypertension:
引起高血压的原因大致可分为两种:一为食盐过量,另一为胆固醇过多引起。多摄取果菜中的钾能将多余的钠排出体外以预防高血压。

一、糖尿病(附)

一、病因:
它是一组病因不同的内分泌——代谢病,体内胰岛素分泌绝对相对不足或靶细胞对胰岛素敏感性降低,引起糖、蛋白质、脂肪和继发的水,电解质代谢紊乱,还与遗传因素有关。
二、病状:
经常出现烦、渴、多尿、多饮、多食、疲乏、消瘦等表现(相当一部分病人并无上述症状),血液浓度升高,出现尿糖。严重时发生酮中毒或其它类型的急性代谢紊乱,属医学“消渴”、“消胀”范畴。
三、注意事项:
少吃含粮份比较多的食物,多做有氧运动及左退走100步。
四、治疗方法:
1、 冷水泡:10克茶—用200CC冷开水泡10克绿茶。
2、 食疗:芹菜500克、苦瓜10克、枸杞菜15克、洋葱10克、西瓜皮15克、冬瓜皮15克,选取其中3种搅汁或煮。
※ 不论搅汁或煮都需加健身宝5CC、ET(氨基粉)2粒等添加剂,将以上原料转成有机物质。

果菜饮料须知
points to note on fruiot and vegetable beverages
A、 制作过程必须注意的事项:
Items which must be noted in the process of making the drinks.
1、材料要清洗干净。因为水果蔬菜表皮上都留有农药,如果未洗净会产生反效果。因此,用清水洗后,最好泡盐水再洗一次或用水冲洗,避免有残留的农药在果菜上面。
Ingredients must be washed. As the skin of fruits and vegetables retain pesticides, they will produce side-effect if not washed properly. Therefore. After washing them with water, it is advisable to wash them again in salt water or to rinse them with water again. This is to prevevt residues of the pesticide to remain on the fruits and vegetables.
2、用新鲜的材料,水果蔬菜如果新鲜程度降低,维他命的含量也就减少或产生变化。水果蔬菜勿切开了不吃而放放冰箱,这样维他命容易耗失。
Use fresh ingredients. if the freshness of fruits and vegetable deteriorates, the vitamin content will decrease or undergo changes. Do not cur fruits and vegetables before use as the vitamins will disappear easily.
3、最好勿用白砂糖,因为它会消耗体内的维他命B1、B2。同时白砂糖食用过多会导致糖尿病,所以天然饮料如果难饮时,可加入蜂蜜或红砂糖。
